Ingredients for two
For the Kaiserschmarrn:
2 tablespoons of flour
250 g crème fraîche
1 teaspoon Baking powder
80 g of sugar
2 tablespoons butter
1 vanilla bean
Salt from the mill
Preheat the oven to 220 degrees top / bottom heat.
Cut the vanilla pod lengthwise in half and scrape out
.Separate the yolk from the egg whites.
Place the vanilla pulp in the egg yolk bowl, put in the sugar, crème fraîche, baking powder and flour stirring constantly.
Halve the lime squeeze and reserve the juice.
Mix the egg whites with a pinch of salt, lime juice and sugar. Whisk until the mass is fluffy. Place the egg-white with the egg yolk and fold in carefully.
Lubricate a baking pan generously with butter and sprinkle with sugar.
Pour the batter in the baking pan and bake in the oven for 10-12 minutes.
For the strawberry mirror:
250 g strawberries
1 lemon (1 tbsp juice)
30 ml of orange juice
1/2 vanilla bean
30 g of sugar
Wash strawberries and mix with the vanilla, sugar, lemon juice and fresh orange juice.
Heat in a pan at medium temperature.
Crush a few strawberries to thicken the sauce.
Stir constantly so that the sugar is well distributed.
Add some cut strawberries in the end.
Dust the Kaiserschmarrn with powdered sugar.
Arrange and serve the dessert on plates.
